The timeless flavour of Imli-Aloo Bukhara sharbat continues to offer residents a refreshing escape while keeping alive a cherished culinary tradition.
Known for its tangy, sweet and refreshing taste, the traditional drink made from tamarind (imli) and dried plums (aloo bukhara) has remained a household favourite for decades, despite the growing popularity of carbonated beverages and commercially packaged juices.
Prepared using soaked tamarind, dried plums, sugar, black salt, mint and chilled water, the sharbat is typically served with ice and garnished with fresh mint leaves. Some vendors also add lemon juice and spices to enhance its flavour.
Street vendors, juice stalls and roadside eateries across Islamabad and Rawalpindi are witnessing increased demand for the cooling drink, particularly during peak afternoon hours when temperatures are at their highest.
Vendors say the drink not only provides relief from scorching heat but is also valued for its natural ingredients and digestive benefits.
Imran, a vendor who has been selling Imli-Aloo Bukhara sharbat during summers for the past ten years, told APP that people continue to prefer traditional sharbats because they feel refreshed and healthy after consuming them.

Hiba, a university student, said in a conversation with APP that the drink reminds her of childhood summers when homemade sharbats were commonly prepared in households before the widespread availability of soft drinks.
She said traditional drinks like Imli-Aloo Bukhara sharbat are not only refreshing but also provide a sense of cultural connection. “Such drinks are part of our food heritage. They are healthier and much more satisfying in hot weather,” she added.
Health experts also encourage the consumption of natural summer beverages, noting that drinks prepared from fruits and herbs can help maintain hydration and support digestion during intense heatwaves.
With rising awareness about healthy lifestyles and natural foods, traditional drinks are gradually regaining popularity among younger consumers as well.
Shopkeepers noted that demand for desi sharbats increases significantly during summer, particularly in the months leading up to the monsoon season. Alongside Rooh Afza, sattu and lemonade, Imli-Aloo Bukhara sharbat continues to hold a special place on the menus of local vendors and in family kitchens across the twin cities.
